Mint Chocolate Chip Cookie Dough Balls

Do you want to know what I'm most proud of in life? It's probably making these balls. These are LIFE CHANGING! Not to mention this recipe is super clean, has minimal ingredients and is so easy to make!

These sweet little treats are free of gluten and dairy, are vegan and don't require any baking! They are also refined sugar-free, except for the sugar in the chocolate chips.

Give these delicious balls a try and I promise you won't be disappointed.

 
 

WHAT YOU NEED:

1 cup cashew butter

1/2 cup almond flour

1/4 cup coconut flour

1/4 cup maple syrup

1/2 tsp peppermint extract

1/8 tsp sea salt

Heaping 1/4 cup mini chocolate chips

 
 

HOW TO MAKE IT:

  1. Put all ingredients except for chocolate chips into a food processor and blend until mixed together.

  2. Then add the chocolate chips and just mix it around with a spoon until they are distributed evenly (don't use a food processor for this).

  3. Form into balls - I use an ice cream scooper to help form its shape and to create consistent sizes. Feel free to push more chocolate chips into the outside as desired.

This recipe makes about 12 balls, depending on how large you make them! Also, these can be left out on the counter, but best stored in the fridge.
