Lemon Coconut Ginger Balls

Ok, if you guys like lemon and coconut then you will LOVE these…but who doesn’t like lemon and coconut!? These lemon coconut ginger balls are no-bake, and all you need is a food processor!


I’m all about sweets that have minimal sugar, so I’m really excited about these because they are only 3g of sugar each, and it’s only from the natural sugars in dates!

WHAT YOU NEED (makes 10 balls):

1+1/4 cup raw macadamia nuts

1/2 cup coconut oil

1/2 cup coconut flakes

2 medjool dates, de-pitted

Juice and shavings of 1 lemon

1 tbsp chopped ginger


Put raw macadamia nuts in food processor (no soaking required) and blend until creamy.

Then add the rest of the ingredients and blend until combined.

Form to make balls (it will still be pretty wet).

Dip in extra coconut flakes, lemon shavings, or other toppings if desired.

Put them on a plate or tray and then in the freezer for 15 mins, then transfer and store in the refrigerator.
