There’s nothing I love more on a cold and dreary day than coconut curry. It’s so comforting and warms me right up! It’s also super easy to make. I love to pair my coconut curry with roasted broccoli, cauliflower, carrots and organic, pasture-raised ground chicken, but it tastes great with everything. Here’s how to do it!
WHAT YOU NEED:
3 garlic cloves, minced
1-2 tbsp ghee, olive oil or other oil
1.5 tbsp curry paste
1 tbsp coconut aminos
1 tsp chili flakes
1 can of coconut milk
HOW TO MAKE IT:
Sauté garlic in ghee/oil in a pot for a few minutes on medium or medium/low.
Add curry paste, coconut aminos and chili flakes and mix together.
Then add coconut milk and mix together and bring to a low boil, then it’s ready!
Pour on top of food or let your food simmer in it for even more flavor.
